These were careful people handed a shift that quietly required them to be psychic. Nobody had written down what good looked like at 7:40 on a Friday, so eleven people invented their own version, and we called the distance between those versions a performance issue.

That is when systems stopped sounding like paperwork. A good one is the reason a nineteen year old on her third shift can make a stranger feel taken care of with nobody standing behind her.

I still work fine dining. High volume rooms, luxury hospitality brands, Michelin starred kitchens. The best of them were never the ones with the most talented people. They were the ones where the work had been decided in advance, so the talent had somewhere to go.
